Day 17: Potato Leek Soup

David went shopping for groceries and gifts for his employees this morning. After he got home, he fixed us a big breakfast for lunch. He has been so worn out lately. He took a long afternoon nap, and then got up and made Potato Leek Soup for dinner (he's such an awesome husband). We got the recipe from my dad, and it’s one of my favorites (so yummy!). Both boys tried it, but neither one loved it. That’s OK… more for me! :)


And, just in case you'd like to try it for yourself...

Potato Leek Soup

4 strips bacon
1 1/2 cup chopped leeks
1 1/2 cup chopped onions
2 Tbs flour
6 cups water
6 bouillon cubes (chicken)
1 1/2 cup milk
6 medium potatoes
salt & pepper

Cut bacon and brown (in a stock pot).
Add leek and onion and saute until clear.
Add flour - stir until thickens.
Add water, bouillon, and potatoes (peeled and sliced).
Bring to boil - then simmer 30 minutes until potatoes are done.
Blend in a blender until smooth (you won't be able to get all of it in the blender at the same time, so you'll need a clean pot to pour it into after it's blended).
Stir in milk and reheat.
Add salt & pepper to taste.

Serve hot with chopped leek greens and grated cheddar cheese as garnish.


FYI: Potato soup quickly turns to potato concrete, so be sure to wipe up drips and spills right away. :)
